Last Night I mashed cooked blackeyed peas into a paste and spread on 2 small corn tortillas. Rolled it up and tried to fry it in Pam cooking spray but it fell apart. Still tasted good. Had 8 baby carrots and some cucumber along with it. For dessert, blueberries and strawberries. Had a glass of orange juice and a peach when I woke at 6 A.M. Breakfast was Shredded Wheat n' Bran and a cup of soy milk at 9 A.M.Made banana rice pudding this morning- YUM! (first time trying rice pudding). Made the layered dip on vegan lunch box site but used the blackeyed peas. Served the dip with 9 mini corn tortilla chips, 8 baby carrots, 4 slices cucumber and 8 slices kohlrabi. If I get hungry later I'll have some berries.Dinner will be a chicken leg, small baked potato, tomato and yellow wax beans, and berries.Lori

I just bought a Laptop Lunch Box. It is so cool. Checkout the link on the side. It is a lunch box with removable compartments 1 large lided container for "wet" foods like applesauce, soup or fruit, 1 unlided container, 2 small containers and a tiny lided container for dips or sauces or dressings. It comes with a stainless steel fork and spoon and everything fits in the box which fits in a regular lunchbox or bookbag. I will use this for taking my lunch to school (I am a teacher) and it will ensure that I am eating from all the food groups and having portion control. I like that it also comes with sample menus and recipes. Bought Kolhrabi for the first time today- will steam it and serve it with peas tomorrow night for my dinner along with a chicken leg and a small baked potato.Lori
